Token had no intention of creating a bitters line in the early days of the company. The experiment was a way to keep chemical engineer and free spirit Cam O’Neil occupied while he and co-founder Keenan Pascal waited on a cannabis production licence.
The pair dreamed of starting a cannabis beverage brand and explored a number of products — from tea to juice to tonic water — that would allow them to practise building flavour profiles.
They settled on bitters to complement the city’s newly flourishing craft cocktail scene.
But serendipity and community support transformed the pet project into a successful venture.
Token’s unique flavour profiles are informed by some of Edmonton’s top bartenders and refined by O’Neil’s distinct palate and expertise in molecular science. The bitters themselves are the result of a collaboration with Edmonton-based Hansen Distillery.
Locally-sourced botanicals are steeped in Hansen Distillery’s infamous moonshine for a month before being diluted and bottled by hand.
